Zucchini Bread

Zucchini Bread Recipe (Yields 2 loaves)

Ingredients:

3 cups flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1/4 tsp. baking powder
3 eggs (beaten)
2 cups white sugar
3 tsp. vanilla
1 cup vegetable oil
3 cups grated zucchini (no need to remove seeds if zucchini is small)

​Instructions:

Preheat oven to 350F.

Grease & flour 2 loaf pans. Set aside.

In a large bowl, sift together flour, salt, baking soda, cinnamon & baking powder.

In a separate large bowl (or stand mixer bowl), Add eggs, sugar, vanilla & oil. Mix well.

Add grated zucchini and dry ingredients to the bowl with the egg mixture. Mix well.

Pour batter into the prepared loaf pans.

Bake for 50-60 minutes, or until toothpick comes out clean.

Cool in pan for 10 minutes then remove and place onto a cooling rack to cool completely (unless you're like me and cut it while it's still hot).
