Nan's Bird Nest Cookies

Indulge in the delightful trifecta of shortbread, coconut, and jam-filled bird nest cookies, where buttery, melt-in-your-mouth coconut-coated shortbread cradles a dollop of sweet jam.

These cookies transport me back to my nan's kitchen

These irresistible treats not only promise a burst of deliciousness but also boast an adorable bird nest design that adds a touch of whimsy to any gathering or afternoon tea.

Nan's Bird Nest Cookies Recipe (Yields 24 cookies)

Ingredients:

1 cup butter

1/2 cup brown sugar

2 eggs (yolks & whites separated)

1/2 tsp. salt

2-2 1/2 cups. flour

shredded white coconut

jam of choice (I use homemade strawberry jam)

​Instructions:

​

  1. Preheat oven to 375F.

  2. In a large bowl, cream together butter and brown sugar. I find this easier with my stand mixer but it can be done by hand.

  3. Into the bowl, add 2 egg yolks (beaten). Mix.

  4. Add salt and 2 c. flour. Mix well. If mixture is sticky, add more flour.

  5. Form into 1 Tbsp. balls.

  6. Whisk egg whites just until frothy.

  7. Dip balls into egg whites then roll into coconut.

  8. Using your thumb, press down the middle of each cookie.

  9. Bake until golden, about 15 minutes.

  10. Once baked, fill center of each cookie with your choice of jam (approx. 1/2 tsp.).

  11. Place on cooling racks to cool. 

  12. Enjoy!
