Nan's Bird Nest Cookies

Nan's Bird Nest Cookies Recipe (Yields 24 cookies)

Ingredients:
1 cup butter
1/2 cup brown sugar
2 eggs (yolks & whites separated)
1/2 tsp. salt
2-2 1/2 cups. flour
jam of choice (I use homemade strawberry jam)

​Instructions:

Preheat oven to 375F.

In a large bowl, cream together butter and brown sugar. I find this easier with my stand mixer but it can be done by hand.

Into the bowl, add 2 egg yolks (beaten). Mix.

Add salt and 2 c. flour. Mix well. If mixture is sticky, add more flour.

Form into 1 Tbsp. balls.

Whisk egg whites just until frothy.

Dip balls into egg whites then roll into coconut.

Using your thumb, press down the middle of each cookie.

Bake until golden, about 15 minutes.

Once baked, fill center of each cookie with your choice of jam (approx. 1/2 tsp.).

Place on cooling racks to cool.
